September signals a return to routine and for many it’s back to school.
When our family was young, that meant lunches to pack and the need for after-school snacks.
Oatmeal raisin cookies are a classic. The addition of whole wheat flour gives these treats a bit of a healthier spin.
You also can add some chopped walnuts or a handful of chocolate chips.
Oatmeal Raisin Cookies

(Makes 1 dozen)
1/4 c. (50 ml) butter, softened
1/2 c. (125 ml) brown sugar
1/4 c. (50 ml) white sugar
1 egg
1/2 tsp. (2 ml) vanilla
3/4 c. (175 ml) whole wheat flour
1 tsp. (5 ml) baking powder
1/2 tsp. (2 ml) cinnamon
1/4 tsp. (1 ml) salt
1-1/4 c. (300 ml) oats
1/2 c. (125 ml) raisins
1/3 c. (75 ml) chopped walnuts (optional)
Directions:
1. Using an electric mixer, cream the butter until pale. Add the sugars and continue to beat until smooth.
2. Beat in the egg and vanilla.
3. In a separate bowl, combine the flour, baking powder, cinnamon, salt, oats and raisins. (Add walnuts if using).
4. Add the dry ingredients to the wet and stir until just combined.
5. Divide dough into 12 balls. Place on a parchment-lined baking sheet and press lightly to flatten.
6. Bake in a preheated 350 F. oven for 8-10 min.
